1 C sugar
1 C butter (softened)
1 C flour
1 tsp baking soda
Zest of 1 lemon

Preheat over to 375º. Beat together eggs and sugar with electric mixer until pale yellow and a little frothy, about three minutes. Scrape down sides of the bowl. Continue to beat, add butter 1 teaspoon at a time until all the butter is incorporated, about 5 minutes. Batter may appear slightly curdled.

Sift together flour and baking powder, then gradually add to the batter, beating on low speed. Add lemon zest and mix until batter is smooth, about 1 minute.

Spoon the batter into well buttered and floured Madeleine pan. Bake until golden, about 20 minutes. Remove from oven. Allow to cool before unmolding.

The most famous of literary confections, the Madeleine, which was perhaps named in honor of Madeleine Paumier, a 19th century French pastry cook, inspired the narrator of Marcel Proust's Remembrance of Things Past to embark on his epic exploration of time, memory and love.
