2 tablespoons butter
1 med onion, chopped
1 stalk celery, chopped fine
1 large head of broccoli, chopped
1 quart vegetable stock
3 tablespoons butter
3 tablespoons all-purpose flour
2 cups milk
Salt and pepper to taste

Directions:
Directions:
Melt butter in a soup pot and saute the chopped onion, celery, and broccoli stalks until tender. Put aside about 1/2 C stock and 1 C of very small florets in a small saucepan. Add the rest of the broccoli and stock to the soup pot and cook about 15 minutes. Puree and return to the soup pot. Steam the retained florets and stock for about 5 minutes until just tender and add to the soup pot. Then melt additional 3 tablespoons of butter on low in small saucepan. Slowly add the flour while stirring to make a roux. Cook on very low heat for about 2 minutes. Add milk and stir to make a creamy sauce. Stir into the soup pot. Season to taste and warm carefully on low if necessary.
