4 eggs
2 cups sugar, added gradually
1 cup vegetable oil
2 cups raw grated zucchini (unpeeled)
3 ½ cups flour
1 ½ teaspoon salt
1 ½ teaspoon baking soda
1 teaspoon cinnamon
¾ teaspoon baking powder
1 teaspoon vanilla
1 cup nuts (coarsely chopped and dusted with flour)

Directions:
Combine ingredients. Bake at 350º for about 1 hour until tested comes out clean. 2 loaves. Doubling this recipe makes 5 foil loaf pans.
