1 quart heavy cream
1 1/2 - 2 tablespoons dried rosemary
Salt and cracked black pepper to taste
1/2 pound bacon
1 pound elbow macaroni
2 cups Gruyère cheese
Chopped chives for garnish

Directions:
Directions:
Diced bacon, fry until crisp, drained and set aside.
Cook macaroni according to package instructions. Reserve 3 teaspoons of pasta water. Drain and set aside pasta.

Place cream in large saucepan with rosemary. Add salt and pepper. Bring to boil and keep at boil until reduced by half. Stir in bacon and pasta and simmer until hot; add the Gruyère cheese and 3 teaspoons pasta water. Stir until cheese is melted. Garnish with chopped chives. Serve immediately.
