2 1/2 pounds baking potatoes, peeled and quartered
1/4 cup butter
1/4 cup milk
1 teaspoon salt
1/4 teaspoon white pepper
2 egg yolks
2 tablespoons butter
1/4 teaspoon paprika

Directions:
Directions:
Cook potatoes in boiling water to cover 15 minutes or until very tender; drain and mash well. Stir in butter and next 3 ingredients; cool 10 minutes. Stir in egg yolks.
Spoon mixture into a large decorating bag fitted with a large star tip. Pipe 14 (2-inch) rosettes onto a lightly greased baking sheet. Drizzle with melted butter, and sprinkle with paprika.
Bake at 400º for 15 minutes or until lightly browned around edges.
Note: To make ahead, pipe potato mixture into rosettes; cover and chill up to 3 hours. Let stand at room temperature 30 minutes; bake as directed.
