1 head cauliflower, cut into florets
2 1/2 T olive oil, divided
1 T truffle oil
1 unbaked pie crust
1 onion, thinly sliced
1 T Dijon mustard
2 eggs
8 oz mascarpone cheese
1/2 c cream
1/4 t pepper
pinch nutmeg
1 c Gruyere cheese, grated
3/4 c Parmesan cheese, grated

Directions:
Directions:
Preheat oven to 425º. Toss cauliflower with 1 T oil. Spread onto baking sheet. Sprinkle with salt and pepper. Roast 15 minutes, turn, and roast another 25 min. Cool, thinly slice, drizzle with truffle oil, set aside.
Bake pie crust, cool.
Saute onion in 1 1/2 T oil. Sprinkle with salt and pepper. Cook about 40 min, cool slightly.
Brush crust with mustard. Spread onion then cauliflower. Whisk eggs, cream cheese, cream, pepper and nutmeg. Stir in Gruyere. Pour over onions in crust. Sprinkle with Parmesan. Bake at 350º for 40 min. Let stand 15 min before cutting and serving.

For pie crust I use Pillsbury refrigerated. Don't forget to turn down oven when baking pie crust or tart after roasting cauliflower!
