Extra Virgin Olive Oil
lg onion, diced
1 t Kosher salt
2 c Arborio rice
2 c dry white wine
2 lg pinches saffron
4 c chicken stock, kept at a simmer
2 T butter
3/4 c parmesan cheese, grated

Directions:
Directions:
Coat large saucepan with olive oil. Saute onions and salt (5 min). Raise heat to med, add rice and cook 4 min. Add wine, cook med-high till liquid is absorbed. Crumble saffron into stock. Pour some stock over rice till it covers rice. Cook over med-high till absorbed. Repeat 2 more times. Taste rice to be sure it is tender. If still crunchy, add boiling water 1/2 c at a time till tender. When tender stir in butter and cheese.
