3 cups thinly sliced zucchini
1 cup Bisquick
1/2 cup grated Parmesan cheese
1/2 cup finely chopped onion
2 TBS snipped parsley
1/2 tsp salt
Dash of pepper
1 clove minced garlic
1/2 cup vegetable oil
4 eggs slightly beaten

Heat oven to 350º. Grease 9x13 baking pan. Mix all ingredients and spread into pan. Bake until golden brown about 25 minutes. Cut into 1 x 2 inch rectangles.
