2 lb Boneless skinless chicken breasts or chicken tenders, cut into 1 9nch pieces
1 sm. eggplant, peeled and cut into 1/2 in, slices
1 medium zucchini, cut crosswise into 1.2 in. slices.
2 medium onions, each cut into 8 wedges
24 medium mushrooms, stems removed
16 cherry tomatoes
16 wooden or bamboo skewers soaked in water 20 minutes
1 c. fat free reduced sodium chicken broth
2/3 c balsamic vinegar
3 tbsp olive oil
2 tbsp dried mint leaves
4 tsp dried basil leaves
1 tbsp dried oregano leaves
2 tsp grated lemon peel Chopped fresh parsley (optional)
4 c hot cooked couscous

ALTERNATELY
thread chicken eggplant, zucchini, onions, mushrooms and tomatoes onto skewers, place in large glass baking dish
COMBINE:
chicken broth, vinegar, oil, mint basil and oregano in small bowl pour over kabobs. Cover; marinate in refrigerator 2 hours, turning kabob occasionally, Remove kabob from marinade, discard marinade.
PREHEAT:
grill 5 minutes Grill Kabobs 7 minutes or until chicken is no longer pink in enter, tuning kabobs halfway through cooking time Stir lemon peel and parsley if desired, into couscous; serve with kabobs.
