Dressing:
3/4 c. sugar
1 t. dry mustard
1 t. salt
1/3 c. cider vinegar
1/2 c. chopped red onion
1/2 c. cold water
1/2 c. olive oil
1 1/2 t. poppy seed
Salad:
1 head iceberg or romaine lettuce
5 oz. fresh spinach leaves
2 large Granny Smith apples
1/2 lb. grated Swiss cheese
1 - 9 oz. cashews either halves or pieces

Directions:
Directions:
Dressing: - Heat sugar, mustard, salt, vinegar and onions until sugar dissolves. Do not Boil. Add water, oil and poppy seeds. Chill slightly in refrigerator.
Salad: - Toss salad ingredients together. Add Dressing and gently toss.
