6 slices white bread
spreadable butter
2 cheese slices
2 eggs

Butter bread one slice for each egg as well as 4 additional pieces. Sprinkle Cinnamon Sugar on 2 slices. Place slice of cheese on the remaining two slices. Place all on a cookie sheet. Place water into bottom of poacher and drop a pat of butter in each egg cup, including the one you won't use. This allows even cooking. Heat until boiling. Drop an egg into each cup and return to heat. Cover and turn heat to medium. Watch closely; you want the whites to be cooked and the yolks to still have some runniness to them (just slightly firm) Remove from heat. They will continue to cook. Broil toast on high in the oven until cheese pops up but don't let the butter and cinnamon burn. Remove from oven and take off the cookie sheet immediately so the bread doesn't stick to the pan. Place one egg on each piece of buttered bread and mash egg with a fork spreading over the bread to cover. Cut each piece into 9 pieces checkerboard style. Serve with Grits.
