1 red pepper
1 green bell pepper
1/3 c. large mushrooms
2 green onions sliced
1/4 c. fresh lemon juice
1/8 tsp. black pepper
1/2 to 3/4 pound of beef flank steak
4 Mission Flour Tortillas
1/3 c. lightly packed fresh cilantro

Grill 5 minutes. Prepare mango Salsa; set aside

Grill peppers, skin-side down 12 minutes or until tender. If mushrooms are small, thread onto skewer's. Grill mushrooms about 6 minutes or until tender and lightly browned. Cut peppers into 1/2 in strip; slice mushrooms. Combine vegetables, onions, lemon juice and black pepper in medium bowl; set aside and keep warm

Grill steak 7 to 9 minutes or until desired doneness. Remove from grill let rest 3 minutes. Slice steak against the grain into 1/2 in. strips. Combine with vegetable mixture. Grill tortillas about 1 minute or until warmed Spoon 1/4 of meat mixture down center of each tortilla. Roll to enclose fillings serve immediately with Mango Salsa

Mango Salsa

In a medium bowl, combine 2 c. peeled diced mango, 1/2 c diced red pepper 1/4 c. finely diced red onion, 1 serrano pepper, seeded and minced, 2 Tbsp chopped cilantro, 2 tsp minced fresh ginger and 1 tbsp lime juice
