Ingredients:
Ingredients:
6 c. mashed sweet potatoes
3/4 c. brown sugar ( can use dark or light I've tried with both and don't find a difference)
1/2 c. heavy cream
1/4 c. melted butter (I add more sometimes depending on tenderness of potatoes)
1/2-1 tsp. cinnamon (depending on how much you like cinnamon)
1/4 tsp. salt
2 c. mini marshmallow

OATMEAL STREUSEL
1/4 c. rolled oats
2 T. brown sugar
1 T. flour
1/8 tsp. cinnamon
2 T. cold butter

Directions:
Directions:
Preheat oven to 350º. Rub vegetable oil on skin of sweet potatoes and bake at 400º for 60-70 min. When cool, scrape out insides. Use an electric mixer to beat on high until mashed and smooth. Measure exactly 6 cups of potatoes and put them into a large bowl.
Add brown sugar, cream, melted butter, cinnamon, and salt. Beat well. Pour into an 8x8 baking dish.

Put rolled oats into a food processor until looks like a fine flour. Combine oat flour, brown sugar, flour and cinnamon in a bowl. Cut in butter with a fork until it is a crumble pea size mixture. Sprinkle over potatoes and bake 70-80 min. until top is lightly brown.
Remove from oven and top with marshmallows and let set 10 min. (Sometimes I will throw back in on broil to brown them.)

Personal Notes:
Personal Notes:
This is as close as I can get it to Boston Market's! I've tried to create theirs multiple times and this is as close as I can get! ** Cook sweet potatoes on tinfoil so they do not ruin your pan I've learned from experience!
