1 stick of butter (1/2 cup)
3/4 cup sugar
2 eggs
2 cups of flour
2 tsp baking powder
1/2 tsb baking soda
1/2 tsp salt
3 ripe bananas, mashed
1 tsp vanilla extract
1 cup coursely chopped pecans

Directions:

Heat oven to 350
Grease large loaf pan
Combine flour, baking powder, baking soda and salt in one bowl.
In another bowl, with an electric mixer, cream the butter and sugar, add the eggs and beat on medium until very light & fluffy - about 4 minutes. Mix in vanilla.
Add flour and bananas alternately to the egg mixture and mix until smooth.
Fold in the pecans
Pour into the prepared pan and bake 45 minutes to 1 hour. Start checking with a toothpick at 45 minutes. The trick to moist bread is to not overcook it. When toothpick comes out barely clean, remove from oven and let sit in pan for 5 minutes. Turn out of pan into plate for cooking.
If desired, drizzle with butter cream frosting when bread is still slightly warm and let finish cooling.
BUTTER CREAM: mix 2 tbsp. of soft butter, 1/2 tsp. vanilla, 1-2 tbsp. milk and enough powdered sugar (approx 1 cup) to make a creamy frosting, which can be drizzled from a tbsp over the bread.
