Directions:
Pop corn and place in a large bowl. Scoop the corn from the bowl into a large brown paper bag leaving the unpopped kernels in the bottom of the bowl. Discard unpopped kernels and pour popped corn back into the bowl. Set aside.
In a 2 quart casserole dish, or other heat-proof glass dish, combine the brown sugar, margarine, corn syrup, salt and vanilla. Heat for 3 minutes in the microwave, then take out and stir until well blended. Return to the microwave, and cook for 1 1/2 minutes. Remove from microwave, and stir in the baking soda.
Pour syrup over the popcorn in the bowl, stirring to coat corn. Pour mixture into paper bag and roll down the top once or twice to close the bag. Place bag into the microwave, and cook for 35 seconds. Remove, shake, flip the bag over, and return it to the microwave. Cook for another 35 seconds. Personal Notes:
This recipe is simple and delicious! Peanuts (1/2 to 1 cup) can be added before the syrup is poured onto the popped corn. If a brown bag is not handy, you can use a large microwave safe bowl and just stir and toss with wooden spoon every 30 sec. You may have to cook less or more depending on your microwave. ***This is great to make and tie up into cello bags for your favorite baseball boy!!! ;-)
