Directions:
Preheat a 6 quart pan or large skillet at medium temperature until water droplets dance in pan. Sear roast 5 minutes per side turning roast when it loosens from pan. Add carrots and potatoes. Cover pan. Turn burner to med-low heat when cover floats. If cover floats again, turn to low. Cook 20 minutes per pound.
