16 oz. pkg. dried Navy beans
2 qts. water
1 meaty ham bone
1 onion, chopped
1/2 c. celery leaves, chopped
5 whole peppercorns
salt to taste
Bay leaf

Directions:
Cover beans with water in a large soup pot; soak overnight. Drain. Combine beans, water and remaining ingredients in a slow cooker. Cover and cook on low setting for 10-12 hour, or on high setting for 5-6 hours. Remove ham bone; dice meat and return to slow cooker. Discard bay leaf, if using.
