Crock Pot Italian Beef Recipe

about 3 cups of Au Jus Sauce or Beef Broth
2 teaspoons of Italian Seasoning
2 teaspoons whole fennel seed (found in the spice aisle, this is what gives this recipe its distinct flavor)
1 teaspoon minced garlic
1/2 teaspoon crushed red pepper flakes
3 - 4 lb beef roast
1 large onion, cut in thin slices
2 green peppers, cut in thin strips
salt and pepper

Directions:
Directions:
1. Place Au Jus Sauce (or beef broth) in the crock pot. Stir in Italian seasoning, fennel seed, garlic, and crushed red pepper flakes. Place roast in crock pot, fat side up. Cook on high for about four hours.
2. Flip roast in crock pot. Put onion slices and green pepper strips over the top of the roast. Cook on high for about another four hours.
3. About a 1/2 hour to 1 hour before serving, use two forks to pull the beef apart. Stir, test sauce for flavor, and season with salt and pepper to taste. Stir and let cook a little while longer on low heat.
7. Serve beef on buns or French rolls. I recommend pouring a little of the sauce on the bun for extra flavor.

Optional toppings – sliced mozzarella or provolone cheese and sliced pepperocini peppers or jalapeño peppers.
