2 c. sugar
1/2 c. soft margarine
1/2 c. Crisco
6 egg yolks
6 egg whites
1 c. buttermilk
1 tsp. baking soda
2 c. flour
1 tsp. vanilla
1 c. coconut
1 c. chopped pecans
Icing
1 stick soft margarine
1 tsp. vanilla
1 8oz. cream cheese
1 box powdered sugar
additional coconut and nuts (if desired)

Cream together sugar, 1/2 c. margarine ,Crisco and egg yolks. In a cup, mix buttermilk and baking soda. Add the buttermilk mixture alternately with flour to creamed mixture. Add 1 tsp. vanilla and fold in 1 cup of coconut and 1 cup of chopped pecans. Add 6 stiffly beaten egg whites. Pour into 3 prepared 9 inch cake pans and bake at 350º for 30 minutes. To make icing, blend until creamy 1 stick softened margarine, vanilla, cream cheese and powdered sugar. I always add some coconut and nuts to my icing. When cake has cooled add the icing and refrigerate.
