2 pounds Yukon Gold potatoes, peeled and cut into 1/2" pieces.
1 cup water
1 cup chicken broth
2 Tbsp. white vinegar
1 Tbsp. sugar
1/4 cup vegetable oil
1 small red onion, diced
2 Tbsp. pickle relish
2 Tbsp. minced green onions
1 Tbsp. Dijon mustard
Salt to taste

Boil 1 cup water, potatoes, broth, 1 tablespoon vinegar, sugar, 1 teaspoon salt in skillet or sauté pan over high heat. When boiling, reduce heat to medium, cover and cook for 15 to 18 minutes, or until potatoes are fork tender. Remove cover and increase heat to high. Cook for 2 minutes, or until liquid is reduced.

Drain potatoes in colander set over a large bowl, reserving cooking liquid. Set potatoes aside. Pour off all but 1/2 cup cooking liquid. Whisk cooking liquid, 1 tablespoon vinegar, vegetable oil, red onion, green onion, pickle relish, and Dijon mustard together in large bowl.

Add 1/2 of cooked potatoes to bowl with cooking liquid mixture and mash with potato masher until smooth. Add remaining potatoes, stirring to combine. Season with salt and pepper to taste.
