12 ounces linguine
3 TBSP sesame oil
6 green onions, chopped
5 cloves garlic
1 TBSP fresh ginger, grated
1/4 cup peanut butter
1/4 cup honey
1/4 cup soy sauce
3 TBSP rice vinegar
1 TBSP chile garlic sauce
2 cups fresh bean sprouts
1 cup finely chopped carrot
1-2 cups sugar snap peas, lightly steamed
1/2 cup chopped peanuts
1/2 cup chopped cilantro for garnish

Directions:

Cook linguine till tender, but firm to the bite. Drain well and place in large serving bowl. Toss with 1 TBSP sesame oil. In a pan heat 2 TBSP sesame oil over medium heat. Add green onions, garlic and ginger. Saute for a couple of minutes and add peanut butter, honey, soy sauce, rice vinegar, and chili garlic sauce. Cook one minute longer. Add sauce to the pasta. Add bean sprouts, carrots and snap peas and toss. Garnish with chopped peanuts, green onions and cilantro. Serve at room temp.

Can be made ahead of time. Can also add cooked chicken to make it more of a main dish. My kids love this!
