4-6 chicken breasts (i used frozen, but you can use fresh)
1 T brown sugar
1 T Dijon Mustard
2 cups salsa (pick your heat preference) - I used mild
1/2 cup sour cream (I used light)
1 can of corn or 1 can of black bean (I used both, but my kids just won't eat beans yet)

Serve over Brown Rice
garnish with sour cream, grated cheese, and or salsa

Combine ingredients in crock pot, except for sour cream and rice and cook on high for 4 hours or low for 6-8 hours.

Shred the chicken and during last 30 min or so add sour cream and corn or black beans (drained).

Michael and I loved it, but the kids complained about the black beans. Next time I'll make it without.
