1 medium sized fresh (but dead) rattlesnake
3 tbsp butter
3 tbsp flour
1/4 tsp salt
1/4 tsp pepper
1 tsp tarragon
8 mushrooms

Directions:
Directions:
Remove head, skin, clean and cut into 3" sections and arrange in baking dish with sliced up mushrooms.

Prepare white sauce by heating butter, flour, salt and pepper in sauce pan for 4-5 minutes. Stir in cup of milk until smooth then add tarragon. Pour completed sauce over pieces of snake and mushrooms. Cover and bake at 325 F for 45 minutes to an hour or until done.

There is cartilage but the meat comes off easily. Very tasty! Plus you'll find its very clean meat compared to chicken or fish. A side note, don't waste the skin, roll it up and put it in a ziplock bag with 3 parts glycerin and 1 part antifreeze, enough to cover and saturate. Throw in the bag of the refrigerator for about 3 months. Take it out and lay it between newspapers to absorb the moisture. Don't leave it or liquid around for pets, antifreeze is harmful. Once its dry it'll be "tanned" and last for years for hat band or decoration.
