Fire in the Hole Chicken Chili Recipe

3 large Chicken Breast, cut in three sections
2 tbsp Olive Oil
4 cloves garlic - chopped
1 cup chopped cilantro (add throughout cooking process)
1 chopped green pepper
1 chopped Vidalia onion
1 can white navy beans/or black eyed peas
2 cans pastene tomatoes (crushed and blended)
1 cup chicken broth
1/2 cup of red wine (rest for you!!)
Spices: chili powder, fresh jalapeņos, chili peppers, smoked chipotle spice, cumin, garlic powder, (add throughout cooking process)

Can substitute beef or pork in place of chicken...but use beef broth in place of chicken broth

Brown chicken, and season with spices while browning,
Add chopped jalapeņos and some garlic
Add chicken to Sauce....
Simmer for 1/2 hour to let chicken tenderize, then remove chicken and pull apart like string and add back to pot! Add Chicken Broth and Wine
Simmer for addotioma; 25 minutes - add more fresh cilantro
Saute peppers and onions al dente!..season with chili powder and garlic while sauting
Add to pot...simmer for few minutes
Add beans towards last minutes on low simmer so they don't get mushy.
Top off chili with more cilantro!
Serve with shredded cheese and chips!
