4 - skinless, boneless chicken breast halves
2 - tsp olive oil
Cooking spray
1/4 tsp black pepper
1/4 cup Smokey bbq sauce (any type will do)
1/2 cup shredded cheddar cheese with jalapeņo pepper (just cheddar is fine, I use Monterey jack)
2 tbsp real bacon pieces
3 tbsp chopped green onions

Place each chicken breast between 2 sheets of heavy-duty plastic wrap; pound to 1/2-inch thickness using a meat mallet.
Heat oil in a large nonstick skillet coated with cooking spray over medium-high heat. Sprinkle chicken evenly with pepper. Add chicken to pan; cook 4 to 5 minutes on each side or until chicken is lightly browned and done.
Brush 1 tbs bbq sauce over each chicken breast; top each with 2 tbs cheese and 1 1/2 tsp bacon pieces. Cover, reduce heat to medium-low, and cook 2 minutes or until cheese melts. Sprinkle each with 2 tsp green onions.
