Regular yellow cake mix
Whole Coconut
1 1/2 C sugar
1/4 t cream of tartar
1/8 t salt
2 egg whites
1/2 t almond extract

Directions:
Directions:
Nail some holes into a coconut and drain the liquid, saving it. Set aside. Place coconut in a 325º oven for ten minutes. Crack open coconut with a hammer. Using a knife or a potato peeler, remove the skin. Shred the coconut and set aside.

Frosting: Mix sugar, tartar, salt and egg whites and 1/4 C water in a pot over simmering water. Beat steadily over low head until stands in peaks -- 5-7 minutes - no more. Remove from the heat and continue to beat until thick enough to spread. Add the almond extract before spreading. Stir in 1/2 C coconut into frosting. Frost cake and then pat remainder of coconut onto top and sides of frosted cake.

I have an urge to make this cake at thanksgiving I'm hosting this year because it was Pete's favorite. I want to make it and think of Pete and his too strong handshake, how he took me heli skiing, how he didn't realize his ski jacket was purple because he was color blind, how much he helped others and to toast him and remember how much he loved life and how much he loved my mom's coconut cake!
