1 C sugar
1/2 stick butter
2 t vanilla extract
2 C flour
1/2 t baking soda
1/4 lb. ground, unblanched almonds
1 C sugar
3 eggs
1/2 t almond extract
1 1/2 t baking powder
pinch salt
3/4 lb.s unblanched almonds.

Directions:
Directions:
Cream butter and sugar until fluffy about 3 minutes. Add eggs one at a time, beating well. Add extracts. Mix dry ingredients and mix to above. Hand mix in almonds. turn onto a floured board. Make into 4 thin logs. Grease sheet. Bake at 350º for 20-25 minutes til firm and golden. Cool and cut on the diagonal with a serrated knife and bake cut side down for 10-20 minutes until golden.
