1 1/2 lbs. Halibut, cut in 1 inch chunks (you can also use Mahi Mahi or chicken)
1/2 c. celery slices
2 T. oil
1 T. soy sauce
1 can (13 oz) pineapple chunks
2 T. cornstarch
1/2 c. sugar
1 chicken bouillon cube
1/4 c. vinegar
3 green onions
1/2 green peppers, cut in chunks or julienne
1 carrot, peeled and cut julienne

Directions:
Heat oil in work or large skillet. Add Halibut and celery to hot oil and cook over high heat, turning Halibut to lightly brown all sides. Remove from heat and sprinkle with soy sauce.

Drain pineapple, reserving juice. Add water to syrup to make 1 1/4 cup liquid. Combine cornstarch, sugar, bouillon cube, vinegar, and pineapple syrup. Cook the sauce in a large saucepan, stirring constantly until thick and clear.

Add pineapple and onion and heat for about 2 minutes. Add green pepper and carrots. Heat about 20 seconds, stir in Halibut

Serve immediately over a bed of steamed rice.
