1 c. corn meal
1 c. flour
4-6 T. sugar
4 tsp. baking powder
1/2 tsp. salt
1 c. milk
1 egg
1/4 c. oil

Directions:
Directions:
1. Preheat oven to 425.
2. In a medium bowl, combine the dry ingredients.
3. Add milk, egg and oil. Beat until fairly smooth, about a minute.
4. Bake in a greased or sprayed 8 or 9 inch pan. 20-23 minutes.

You can use this in place of Jiffy Mix in other recipes like corn casserole, but use 6 T. of sugar. I usually measure up extra mixes in plastic containers or quart storage bags. Then all you have to do is add the wet ingredients.
