2 tbsp. oil
3 lb. rump roast or eye of round roast
1/2 tsp. salt
pepper
1 medium onion, chopped
1 tbsp. brown sugar
1 tbsp. corn starch
1 1/2 tsp. beef bouillon granules
1/2 tsp. ginger
1 can sliced water chestnuts
1 lb. carrots, cut into 3" pieces
1/2 c. soy sauce
3/4 c. water

Directions:
Preheat oven to 350º. In Dutch oven, heat oil. Season roast with salt & pepper. Place roast and onion in Dutch oven and brown on all sides. Stirring onion occasionally. Combine sugar, corn starch, bouillon, ginger, soy sauce and water in bowl, whisk until corn starch dissolves. Add water chestnuts and pour over roast. Bake covered for 1 hour. Add carrots and bake 45 minutes. Slice roast and serve with gravy and carrots.
