Ingredients: 3 eggs 1 cup sugar 2/3 cup pumpkin 1 tsp lemon juice 3/4 cups flour 1/2 tsp nutmeg 1 tsp baking powder 1/2 tsp salt 2 tsp cinnamon 1 tsp ginger 1 cup chopped walnuts 1 cup powdered sugar Filling: 1 cup powdered sugar 2 (3oz packages cream cheese 4 Tbsp margarine 1/2 tsp vanilla

Directions:Beat on high speed for 5 minutes 3 eggs (don't underbeat); gradually beat in 1 cup sugar; stir in 2/3 cups pumpkin and 1 tsp lemon juice. Stir together in separate bowl: 3/4 cups flour; 1/2 tsp nutmeg; 1 tsp baking powder; 1/2 tsp salt; 2 tsp cinnamon; 1 tsp ginger. Mix together and fold into pumpkin mixture. Spread into greased and floured jelly roll pan or long cookie sheet. Sprinkle with 1 cup chopped walnuts. Bake at 375 for 15 minutes. When done (no longer sticky) turn onto dish towel (while still hot) which ahs been sprinkld with 1 cup powdered sugar. Roll in towel from short side. Let cool for 1 hour in fridge. Unroll and remove towel to fill. Combine and beat until smooth: 1 cup powdered sugar, 2 (3oz) packages cream cheese, 4 tbsp margarine and 1/2 tsp vanilla. Spread on cake with nut side down. Roll and Chill....EAT! |
