1 can (15.5 oz.) black beans, rinsed, drained
1 can (10 o.z) mild enchilada sauce
1/2 cup frozen corn, thawed
1 pkg. (16.9 oz.) frozen pierogies such as Mrs. T's
2 scallions, chopped
1 cup Mexican-style shredded cheese blend, about 4 oz.
1 tbsp. chopped fresh cilantro
sour cream, optional

1. Preheat oven to 375º. Combine beans, sauce, corn and scallions. Spread half of sauce mixture in bottom of 3-qt baking dish. Top with pierogies and remaining sauce mixture.
2. Cover with foil. Bake 40 minutes. Remove foil; sprinkle with cheese. Bake 5 minutes. Sprinkle with cilantro. If desired, serve with sour cream.
