1 medium head of cauliflower, cut
into flowerettes
1/4 cup butter
2/3 cup onion, chopped
2 tbs flour or more if want thicker soup
2 cups chicken broth
1/2 tsp Worcestershire sauce
1 cup liquid, drained from
cauliflower
additional water to make 1 cup liquid, if necessary
2 cups light cream
1 cup cheddar cheese, grated
3/4 tsp salt
chopped chives or parsley

Directions:
Directions:
Cook cauliflower just until tender in boiling, salted water, reserving liquid. Melt butter in a 3-quart saucepan. Add onion and cook until soft. Blend in flour. Add chicken broth and cook, stirring constantly until mixture comes to a boil. Stir in liquid from cauliflower, cream, worcestershire sauce and salt. Add reserved cooked cauliflower. Bring all to a boil and stir in cheese. Can use Cheezwiz instead of grated cheese. I also use the non-fat cream that is now on the market. It is great to use.
Broccoli is good instead of cauliflower.
