Cake:
1 1/2 c flour
1 1/4 c sugar
1 1/2 tsp baking soda
1 1/2 tsp cinnamon
1/4 tsp salt
2 small jars strained baby food carrots
2/3 cup oil
1/2 tsp vanilla
2 eggs
3 oz crushed pineapple, drained
2/3 cup coconut
1/2 cup walnuts, chopped

Frosting:
1/2 c butter
8 oz softened cream cheese
1 tsp vanilla
1 pound of powdered sugar

Directions:
Directions:
Mix everything but flour, pineapple, nuts and coconut. By hand stir in remaining ingredients. Bake at 350º for 30-40 minutes. Cool completely.
Mix frosting ingredients and spread on cake.
