2 c. milk
1/4 c. cornstarch
2/3 c. sugar
1/2 tsp salt
3 egg yolks
2 T margarine
1 tsp vanilla

Directions:
Directions:
Place milk in 2 c. glass measure and cook until hot but not boiling. Blend together cornstarch, sugar, and salt in 1 1/2 quart glass container. Gradually stir cornstarch mixture and milk together with wire whisk. Cook in microwave until thick and glossy. Stir once or twice. Beat egg yolks, temper, thin mix quickly into hot mixture. Cook this until boiling. Mix well, then add vanilla and margarine.
For coconut cream pie - stir in 1/2 c. Coconut into hot pudding.
For chocolate - add 1/2 c. cocoa to cornstarch mixture before cooking.
For banana cream - add sliced bananas to cooled pudding.

Editor's Note: Use egg whites to make a meringue, if desired. Beat 3 egg whites with 1/4 tsp cream of tartar until foamy. Add 2 T sugar, a little at a time and continue beating until stiff peaks form. Pile on hot pie filling and bake at 325 for 15-20 minutes. (From my Grandma Estelle)
