Ingredients: 600g sultanas 140g currants 250g raisins 1 lemon rind grated 500g butter 1 1/2 cup water
Other Ingredients: 4 large or 5 medium eggs 1 1/2 cups sugar
1 1/2 tsp vanilla essence 1 tsp mixed spice 1 tsp cinnamon 1/2 tsp nutmeg 3/4 tsp orange essence 3 cups flour 1 1/2 tsp baking powder
Brandy Icing: 6 oz butter 3-5 Tbsp Brandy 1 lb icing sugar 2 tsp vanilla essence

Directions:1. Place first six ingredients into a pot and boil for 10 minutes then leave to cool. 2. Beat eggs and sugar until thick. 3. Add ingredients altogether and place in a 9 inch tin which has been insulated using 6 pieces of newspaper tied with string on the outside of the tin. 4. Before putting the cake in the oven using a knife place a cross in the middle of the cake. 5. Cook for 1 1/4 or 1 1/2 hours at 150ºC.
6. When cold ice using the Brandy Icing ingredients, cream butter and sifted icing sugar add brandy and vanilla essence adn beat well. |

The brandy icing recipe come from Vicki Corkill's mum - Ngaire Reid - and is just lovely. Hopefully to will carry this tradition on with you where ever you are in the world and if you have children or your own. With lots of love xxxxxoooooxxxx
