2 cups baking mix
2/3 cup apple juice
2 T. vegetable oil
1 egg
1 cup shredded Swiss, Gruyere, or Cheddar cheese
2 t. chopped fresh or 1 t. dried chives

Directions:
Directions:
Heat oven to 400º. Line 12 medium muffin cups with paper baking cups. Mix baking mix juice, oil, and egg with fork. Beat vigorously for 30 strokes. Stir in remaining ingredients. Divide batter evenly among cups. Bake about 20 minutes or until golden brown.
