500 g brown rice cooked
Spring Onions chopped
1 red pepper chopped
1 green pepper chopped
1 cup saltanas
140g cashews/almonds toasted (we enjoy the cashews)

Mix together:
1/2 Olive Oil
Juice of 1 Lemon
2 tsp Chicken Stock
5 T Soya Sauce

Directions:

Mix all ingredients together and place in fridge before serving. This salad will last in the refrigerator for up to 7 days.
