2 cups lard
6 cups flour (5 cups if making tarts)
1 egg, 2 tbsp vinegar and enough water to fill a cup
1 tsp salt

Filling
2 lemons (juice and rind)
2 egg yolks
1 cup sugar
1 cup water
3 tbsp cornstarch
salt

Directions:
Directions:
Cook sugar and water together and add juice and rind. Stir in cornstarch and cook till thick. Add yolks and cook for 1/2 min.

Meringue
3 egg whites and 6 tbsp of sugar
Beat egg whites until stiff, add sugar gradually. Pile on pie. Bake at 325 until desired color
