1 cup bread crumbs
1 tbsp. grated Parmesan cheese
1 tsp. oregano or Italian seasoning
1/2 tsp. salt
1/4 tsp. black pepper
2-3 tbsp. vegetable oil
1½ lbs. Tilapia fillets

Directions:
Directions:
Preheat oven to 375° F. Lightly oil a baking sheet. In a plastic or paper bag combine bread crumbs, Parmesan cheese, oregano (or Italian seasoning), salt and pepper. Hold the top of the bag shut and shake to mix everything together. Brush both sides of each piece of fish with a little of the oil, then drop into the bag with the bread crumb mixture and shake to coat well. Remove from bag and place on the prepared baking sheet. Repeat with the remaining fillets. Bake for 10 minutes, turn fillets over and continue to bake for another 5 to 10 minutes, or until the fish flakes when you poke into it with a fork.

You can use other white fish fillets, such as sole, cod or haddock.

Memories: I loved spending the night at Aunt Mahalia's house when I was a kid. There were three basic reasons; Becky was my best friend, I liked my Aunt Mahalia, and she was the first person I knew who had indoor plumbing. You really can't relate unless you had an outdoor toilet. You don't really appreciate electricity until the power goes off; well, you can't appreciate indoor plumbing unless you didn't have it. I still consider indoor plumbing to be a luxury. I remember the day Daddy and Ralph McReynolds drove up to the back of the house in Ralph's coal truck and unloaded this gaudy green-colored tub, sink and commode. It was a red letter day in our house. I didn't mind carrying water from the spring all that much, but I really hated that walk to the outhouse on those cold winter days, and even worse, on those hot summer days. We were moving on up..
