4 tbsp butter
1 onion finely chopped
1 tbsp cornstarch
2 cups beef broth
1 lb roast beef deli meat
1 loaf of French bread cut into 4 sections
4 slices pepper jack cheese or Swiss cheese

Directions:
Directions:
In saucepan, melt 2 tbsp butter over medium heat. Add the onion and cook, stirring for 1 to 2 minutes. Add the cornstarch and cook for 1 minute, then whisk in the beef broth. Add the roast beef to the sauce and warm over low heat. Preheat a nonstick grill pan over medium heat. Spread butter over bread sections and place in the grill pan. Top half the bread sections with warm roast beef and save the sauce. Top roast beef with cheese slices and remaining bread sections. Weigh down with panini press or a heavy skillet and cook for 2 minutes. Flip the panini and cook for 2 minutes longer. Remove from heat and serve with the sauce for dipping.
