5 or 6 lb brisket
3 oz, liquid smoke (delute with 3 oz. water)
Celery salt
Garlic salt
Onion salt
Worchestershire sauce
6 oz. barbecue sauce

BRISKET BARBECUE SAUCE:
1/2 C Crisco oil
1/2 C vinegar
1/2 C catsup
1/2 C brown sugar
1 T lemon juice
1/2 to 1 C diced onion
1 T liquid smoke
1/2 C store-bought barbecue sauce

Directions:
Directions:
Sprinkle tenderizer on brisket and stab into meat and do same on other side. Place brisket in baking dish and pour liquid smoke mixture over brisket. Sprinkle beef generously with celery, onion,and garlic salt. Refrigerate overnight. When ready to bake , sprinkle both sides of meat with salt, pepper and Worcestershire sauce. Cover dish with foil and bake at 275* for 4 hours. After baking, remove meat from pan. Cool on carving board for 1 hour. After it cools, slice it in thin pieces and return it to pan. Pour out juices before placing back in pan. Cover meat with prepared barbecue sauce and bake 1 hour or more at 350* (Cover with foil while baking)

This came out of the cookbook Mom gave me years ago. On the cover it says 1981. The recipes are all from the women around Manchester, Oklahoma. This didn't happen to be one of hers, but she has some in there.
