1 c sugar
1/3 c cornstarch
1/8 tsp salt
1 3/4 c blackberry juice
3 eggs, separated
1 tsp lemon juice
1/4 c plus 2 tbsp sugar
1 9-inch baked pie shell

Directions:
Directions:
Combine 1 cup sugar, cornstarch, salt and 1/4 c blackberry juice in a 1 1/2 quart microwaveable mixing bowl; mix well. Stir in remaining juice. Microwave on high for 6 minutes or until thickened, stirring at 2 mins. intervals. Beat egg yolks until thick and lemon colored. Gradually stir about 1/4 of hot mixture into egg yolks (stir as you pour). Add to remaining hot mixture. Microwave for 1 min. Pour into baked pie shell. Beat egg whites (room temp) and 1 tsp lemon juice. Gradually add 1/4 c plus 2 tbsp sugar after beating egg whites 1 min, beating until soft peaks form. Spoon on pie and bake for 10 mins. or until brown.

This is my own recipe. Christy didn't like to eat the seeds in the blackberry pie so I decided to make a pie with juice from my own blackberries.
