Microwave Blackberry meringue Pie Recipe

Ingredients: 1 c sugar 1/3 c cornstarch 1/8 tsp salt 1 3/4 c blackberry juice 3 eggs, separated 1 tsp lemon juice 1/4 c plus 2 tbsp sugar 1 9-inch baked pie shell

Directions: |
Directions: Combine 1 cup sugar, cornstarch, salt and 1/4 c blackberry juice in a 1 1/2 quart microwaveable mixing bowl; mix well. Stir in remaining juice. Microwave on high for 6 minutes or until thickened, stirring at 2 mins. intervals. Beat egg yolks until thick and lemon colored. Gradually stir about 1/4 of hot mixture into egg yolks (stir as you pour). Add to remaining hot mixture. Microwave for 1 min. Pour into baked pie shell. Beat egg whites (room temp) and 1 tsp lemon juice. Gradually add 1/4 c plus 2 tbsp sugar after beating egg whites 1 min, beating until soft peaks form. Spoon on pie and bake for 10 mins. or until brown.

Notes: This is my own recipe. Christy didn't like to eat the seeds in the blackberry pie so I decided to make a pie with juice from my own blackberries.
