Jerk Chicken Nachos Recipe

6 c. tortilla chips
3 c. diced or shredded cooked chicken
2 c. (8 oz) shredded cheddar and Monterey Jack cheese blend
2 T. Jamaican Jerk Rub, divided
1 small yellow or red bell pepper or combination
1 lime
2 T. snipped fresh cilantro
1/4 cup sour cream and 1 tsp additional Jamaican Jerk Rub (optional)

Preheat oven to 425º. Arrange tortilla chips in a slightly overlapping layer on a large cookie sheet or jellyroll pan.
In a bowl, combine the chicken, the cheese, and 1 T. of the Jamaican Jerk rub. Mix together gently.
Sprinkle the chicken rub cheese mixture evenly over the 6 c. of tortilla chips. Bake for 5-7 min. or until cheese is melted. Remove to cool.
While the chicken and chips are in the oven, dice the bell pepper. Slice the lime in half (across). Juice half of the lime into a small bowl and add the remaining Jamaican jerk rub and bell pepper to it and mix well.
Snip the Cilantro. Spoon the bell pepper mixture over the nachos and sprinkle evenly with cilantro. If desired, combine sour cream and additional jerk rub in a resealable plastic bag. Trim the corner of the bag and allow the sour cream to flow through. Spread sour cream mixture over the chicken nachos. Serve.
