16 oz. Ricotta cheese
16 oz. shredded Mozzarella cheese
1 egg
1/2 c. Italian bread crumbs
1/4 tsp. salt
1/4 c. minced parsley
1 jar of tomato sauce (or 2 c. homemade tomato sauce)
1 8 oz. box of Manicotti - Cannelloni (or 1 box of the big shells)
Optional - Parmesan cheese

Directions:
Directions:
1. Preheat oven to 350 degrees.
2. Boil 6 to 8 quarts of water. When boiling, add pasta and cook for 8 to 10 minutes.
3. Combine all the ingredients except pasta and tomato sauce in a large mixing bowl.
4. When pasta is cool enough to handle, stuff the cheese filling into the shell.
5. Arrange in a baking dish. Pour tomato sauce over the pasta. Optional - Sprinkle Parmesan cheese over the sauce and pasta.
6. Bake in oven for 25 to 30 minutes.
