3/4 cup finely chopped broccoli
1/4 cup shredded carrot
1/4 cup sliced green onion
2 tbsp. water
6 (6") flour tortillas
1 tsp. cooking oil
1 (8 oz.) pkg. shredded cheddar or Monterey Jack
sour cream (optional)
salsa (optional)
sliced pitted ripe olives (optional)

Directions:

In a 1 qt. microwave-safe casserole, combine the broccoli, carrots, green onion, and water. Micro-cook, covered, on 100% power (high) for 2 to 4 minutes or until vegetables are crisp-tender. Drain. Brush one side of 3 tortillas with some of the oil. Place tortillas, oiled side down, on a baking sheet. Top with the cheese, vegetable mixture, and remaining tortillas. Brush tops with remaining oil. Bake in a 450º F oven about 6 minutes or until light brown. To serve, cut each tortilla into wedges. Serve with sour cream, salsa, olives, and green onion, if desired. Makes 3 servings.

Memories: I don't remember Uncle Jimmy very well, but I can still hear his laugh and smell the cigar. I do remember the day he bet Uncle Claude, "Shorty" as he called him, that he couldn't climb the telephone pole in Aunt Mahalia's yard. Uncle Claude couldn't pass up a dare, so he put on those lineman cleats that Uncle Jimmy had and up he went - and down he came, sliding down the pole and taking all the hide off his stomach. Uncle Jimmy doubled over laughing, saying "Take, taken, Shorty, the same thing happened to me". Uncle Jimmy always started his sentences with "take", that I remember. I have faint memories of the day Uncle Jimmy died. I remember mostly the quiet. The world seemed to have stopped, and everyone spoke in a hushed whisper. Death was supposed to come for the old, not take a young man in his prime - and not leave a widow alone with young children to feed. I admired the quiet strength that I saw in my Aunt Mahalia. I still do.
