1 lb. bulk pork sausage (Italian if you like)
1 cup chopped onion
1/3 cup chopped green pepper
2 T flour
1 can (6 oz) tomato paste
1 tsp salt
1 tsp chili powder
1/8 tsp. pepper
4 oz. cheddar cheese in 1/2" cubes
1/2 cup sliced ripe olives
1 pkg. Jiffy cornbread mix

Directions:

Preheat oven to 375º Cook sausage, onion, and pepper in skillet until sausage is brown and crumbly. Stir in flour and next 4 ingredients. Remove from heat; stir in olives. Spread evenly in a 9" square pan. I slice the cheese and lay on top of the sausage mixture. Prepare muffin mix according to package directions. Spread over sausage. Bake 30-35 minutes until cornbread is brown. Let stand in pan about 5 minutes. Cut into squares or invert onto plate. Serve.
