36 cherry tomatoes
1 package (8oz.) cream cheese, softened
1 tbsp. dry Italian salad dressing mix
2 tbsp. milk
3 tbsp. chopped fresh parsley

Directions:
Directions:
Place tomatoes stem-side down; cut an x in each, to about 1/4" from the bottom of each tomato. Spread carefully to open the wedges without breaking. In a small bowl, combine cream cheese, dressing mix, and milk. Blend well. Fill each tomato with about 1 teaspoon of the cream cheese mixture. Sprinkle tops with chopped parsley. Refrigerate for up to 6 hours before serving.

Memories: When we were young girls, Becky and I used to stay with Ma McCarty while Grandpa and Grandma went to church. They attended the Crab Orchard Church then. They had no automobile and had to walk there and back. Ma would tell us stories of when she was a little girl. I remember one story she told us about seeing Rebel soldiers coming through Crab Orchard on their way to another battlefield. She said they walked across the hill from what is now Mom's house, through the apple orchard and on toward town.

Ma always had a handkerchief in her hand, and she would roll it up and unroll it as she talked. She wore a long black dress with an apron over it. Her hair was long and pinned up in a bun. I remember seeing her take her long hair down and rewind it back into a bun. I was surprised to see that her hair was down to her waist but very thin. She died when I was about 12 years old. I missed hearing her stories. We enjoyed staying with her in the evenings. It was a treat for us.
