1 1/2 c. brown sugar
2/3 c. oil
1 egg, slightly beaten
1 c. buttermilk (milk + 2 tsp. vinegar)
1 1/2 c. chopped rhubarb
2 1/2 c. flour
1 tsp. salt
1 tsp. baking soda
1 tsp. vanilla

Topping:
1/2 c. walnuts, chopped
1/2 c. sugar
2 T. melted butter

Directions:
Directions:
Mix brown sugar, oil, and egg. Sift flour, salt, and baking soda. Add with buttermilk. Stir only until mixed. Add rhubarb and vanilla. Put in muffin tins. Add topping. Bake at 375º for 25 min.
