2 cups chopped celery
2 cups boiling water
1/4 cup butter
1/4 cup flour
1 chopped onion
1/1/2 cups milk
1 1/2 cups broth (from cooked celery)

Directions:
Directions:
Cook celery (4 to 8 minutes) in boiling salted water. Drain but keep water that the celery was cooked in. In a saucepan melt butter and fry onion, add flour. Making a roux. Remove from heat and add milk and celery broth. Mix well. Put the saucepan back on low heat and stir till mixture thickens. Add cooked celery, salt, pepper and pass in blender.
